  • Garlic: Beyond adding a pungent, delicious flavor, garlic is known for its anti-inflammatory properties. It works to combat the kind of chronic, low-grade inflammation that can contribute to pain and stiffness in your joints.

  1. Prepare the Greens: Wash the kale and spinach thoroughly. For the kale, remove the tough stems and chop the leaves into bite-sized pieces. The spinach can be used as is.
  2. Heat the Pan: Place a large skillet or pot over medium heat. Add the olive oil and let it warm up for about 30 seconds.
  3. Sauté the Garlic: Add the sliced garlic and red pepper flakes (if using) to the pan. Sauté for about 1 minute, until the garlic becomes fragrant. Be careful not to burn it!
  4. Cook the Greens: Add the kale to the pan first. It will seem like a lot, but it will quickly wilt down. Sauté the kale for 3-4 minutes, stirring frequently, until it has softened.
  5. Add the Spinach: Add the fresh spinach to the skillet. Continue to cook and stir until the spinach has fully wilted, which should only take 1-2 minutes.
  6. Season and Serve: Remove the skillet from the heat. Squeeze the fresh lemon juice over the greens. Season generously with salt and black pepper to taste.
  7. Enjoy: Serve immediately as a healthy side dish with your favorite protein or as a base for a grain bowl.
